Parveen's Top Tip

The spinach will produce a lot of water (step 5) make sure you cook this out otherwise it will taste 'watery', if you wish to use frozen spinach you can, but the taste it is not as flavoursome but it's sometimes a good alternative if you can it get hold of any fresh spinach. Oh yes for added flavour just as a knob of butter when you add the coriander.

Spicy Eggs With Potatoes (Anday Aloo)

T his simple egg dish is great to cook when you have no time and need a spice hit. There are so many different ways of making this recipe and I think each Asian family has their own take on it. We all have different versions for example, my mum, my sister and I all have different ways of making 'Anday Aloo' but they are equally as satisfying when hungry. I serve them with buttered chapattis but when I am feeling lazy I have them on toast.
